I can’t even begin to explain how much I love, and I do mean LOVE, these flourless savoury oatmeal feta muffins! This easy savoury breakfast muffin recipe is simple, gluten free and so delicious! If you’re looking for some new easy meal prep breakfast recipes, you’ve got to try these feta muffins!

These muffins are made with simple, delicious ingredients that you can easily change up if you want to. Here’s what you need:

Eggs. So okay, eggs are the exception, there’s no substitute for that. You need eggs for this recipe and pick the best ones you can.

Milk, yogurt, feta & mozzarella cheese. Aka dairy in all of its forms. I know, this is not a dairy-free recipe.

Oats. I used fine oats, which is pretty much quick oats, but oat flour or old-fashioned oats will work too.

Butter or olive oil. We chose butter, I know you get it.

Baking soda to raise the muffins and salt (if needed)

How To Make Savoury Oatmeal Feta Muffins

You can make these feta cheese muffins in no time and in only 3 easy steps after preheating your oven:

Step 1. Gather ingredients and blend everything except for the mozzarella and feta cheese. You can use a blender or a hand blender for this. I used a hand blender and a bowl. Stir in the feta and mozzarella cheese.

Step 2. Divide the muffin mixture into muffin cups, I highly recommend using liners and oiling those muffin liners as it makes it so easy to get the muffins out when they’re done.

Step 3. Bake the muffins for 20-25 minutes or until golden brown.

Make Ahead Breakfast Muffins

These breakfast muffins are a great make ahead breakfast. If you do some type of meal prep in your household, then you’re going to love these for breakfast. They keep well in the fridge and will stay good for at least 3 days. I’d usually have 1-2 for breakfast, depends on whether I’m having something else to go along.

Options

I love the most simple version of these muffins, but if you want to meal prep these for the week and want some variety, you can definitely try some different additions.

There are many ways to sneak vegetables into this muffin recipe – spinach, kale, broccoli peppers, olives or herbs and spices. Wash them, chop them and add a handful to the mixture before baking.

You can also add in some spices like black pepper or crushed red pepper, or whatever you like.

Another thing you can do, as I mentioned is to use healthier alternatives like olive oil instead of butter.


Are These Flourless Feta Muffins Kid-Friendly

Well, my 4-year old loves them! They’re very similar to something we make quite often called banitsa – it’s a typical breakfast pastry for Bulgaria, where I’m originally from. These feta muffins are a healthier version of that, in that they’re gluten-free, have more fiber, and don’t spike my blood sugar when I eat them. So are they kid-friendly, I’d say yes! But as you might know, all children are different, so you’ve got to try the recipe for yourself and your family.

Ingredients

  • 3 eggs
  • 2 tbsp yogurt
  • ¼ cup milk
  • 1 cup oats
  • 3 tbsp butter
  • ½ tsp baking soda
  • Pinch of salt
  • ⅓ cup feta cheese, crumbled
  • ¼ cup mozzarella

Instructions

  1. Preheat the oven to 180C/350F.
  2. Blend the eggs, yogurt, milk, oats, butter, baking soda and a pinch of salt. Stir in the crumbled feta cheese and shredded mozzarella cheese.
  3. Line a muffin pan with muffin liners, make sure to grease them with some coconut or olive oil - this will make peeling the liners off the muffins much easier.
  4. Bake for 20-25 minutes or until the muffins look golden brown.
  5. Let cool off and enjoy immediately or store in the fridge!
