How to make the inside of a malteser? ›

Maltesers are made in two stages. The inner crunchy part is made by making small pellets of a dough like mixture. This is placed in a low pressure container which forces the bubbles in the mixture to expand, making the pellets larger. The pellets are then coated with chocolate and polished.

Why does my caramel slice look curdled? ›

If your caramel becomes gritty or grainy, the sugar probably crystallized. If the melting sugar splashes up onto the sides of the pan, it quickly loses its moisture content and forms back into crystals. That can set off a chain reaction that can cause caramel to seize up, ruining the entire batch.

What is a substitute for golden syrup in caramel slices? ›

- If you run out of golden syrup like I did once, simply use the same measurement of brown sugar in the caramel filling instead. Never use honey or maple syrup, they'll not only overpower the flavour but also not give it the solidity the slice needs.

What is the crunchy bit inside a Malteser? ›

Firstly, Maltesers are made up of a crunchy, light, and airy malt honeycomb centre that is then coated in milk chocolate.

What is the easiest way to cut caramels? ›

When you remove it from the pan, let it sit at room temp for an hour or so, then run a sharp knife around the edge and then turn out onto a cutting mat. I use an old cutting mat that I can no longer use for fabric. I use a pizza cutter to cut the caramel.

How do you cut chocolate bark without cracking it? ›

To cut set chocolate without cracking, I would recommend heating your knife with hot water, drying excess water off of the knife, and then *carefully* cutting into the chocolate.

What is the best way to cut homemade caramels? ›

The best way to cut the caramels is when they are cold from the fridge. Use a super sharp knife, and mark out your cuts before you make them. I find it easiest to cut the whole pan into strips first with vertical cuts, then make the four horizontal cuts.
